Hey all!
Last night I whipped up an easy meal, to help cure my craving for Chinese food. I personally don't think it turned out too bad either. My daughter even loved it. I'm not going to bore with a pre-story, let's just get right to it the recipe for Chicken & broccoli made at home.
This recipe fed about 3 of us. You can alter as needed. My measurements are not precise anyhow ;)
Ingredients:
*3 large chicken breasts (about 1 breast per person)
*teryaki marinade/sauce (for this recipe I used about half the 12.5 oz. bottle)
*garlic salt
*ginger
*white rice (I typically use 10 minute boil in bag, but you can use what you like)
*2 bunches of fresh broccoli
Prep:
1 - Chop chicken into bite size pieces and place in a bowl with 1/2 cup of teryaki marinade, and set aside while you prepare the broccoli.
2 - Chop broccoli and boil in pot (covered), filled about 1/2 way with water, for about 10 minutes.This should steam the broccoli without getting mushy. One done, drain and set aside.
3 - Get a pot of water ready for the rice, per the instructions on the box.
Directions:
1 - Pour the chicken with marinade, into a pan with about 2 tbsp of oil. (your choice of what kind) Sprinkle about 1 tbsp of ginger and 1 tbsp of garlic salt over chicken. you can also add more marinade/sauce if needed, while cooking.
Saute until chicken is almost thoroughly cooked & looks to be about 3/4 of the way done. Lower the heat and place lid over the chicken, and let it finish cooking while you...
2 -Get the water for the rice to a boil. Once the rice is good & cooking....
3 - Add the broccoli to the chicken. Increase the heat to medium and saute until completed.
Serve chicken & broccoli over a bed of rice and dinner is done!
